Video: How to Make Fresh Mozzarella


This video was shot at a recent pizza party hosted by Slice NY and Gothamist, and features Michael Ayoub, chef/owner of Fornino in Brooklyn, demonstrating how to make fresh mozzarella. Ayoub starts from the curds (he buys the curds ready made from a supplier), and shows how to melt, pull, knead and form them into balls. The picture and sound are of poor quality, but you can still understand most of it.

One interesting tidbit; according to Ayoub, "the mozzarella business is the most corrupt business on earth."

"Poor quality" is an understa

"Poor quality" is an understatement -- the video is almost entirely black!

What is slightly visible -- his handling of the curd -- is however incredibly helpful. I've found the instructions in cheesemaking books really hard to visualize, and it would be much more instructive to have a library of (free?) online videos showing the various techniques.

Jamie, maybe you have a video camera? :)
