Bad Curd Nerd!Wesley Lindquist of High Bridge, Wisconsin has given us all a wonderful lesson on how to set the raw dairy movement back a few years, having sickened at least 40 people with his unpasteurized white cheese curds. Cheese curds are fresh curds of cheese that are removed in the middle of the cheddar-making process (before pressing) and sold separately. When they are very fresh, they make a squeaky sound when you chew them, and are a very popular snack in Wisconsin. (And like most American culinary foodstuffs, there is also a deep-fried version of cheese curds, usually available at state fairs and the like.) It is illegal to sell any raw dairy products in Wisconsin, and Mr. Lindquist has been ordered to cease production. Personally, I would've thought his classy "unlabeled clear plastic bag" packaging would've tipped people off to the latent danger of his comestibles, but I guess sometimes you just gotta have some cheese curds.

Grandpa's Curds
To everyone that reads this! Wesley Lindquist is my Grandfather. I have been eating my Grandfathers chesse curds since I was born, 28 years ago. My Grandfather has ment no one harm, he is very upset over this all. Everyone says that it is from un pastuerized milk,(which I know that is againist the law) well I wouldn't doubt it, but what about the way the people that purchased my Grandfather's curds, what did they do with them after they bought them? Did they leave them sit out in the warm weather and get spoiled? Would you drink a glass of milk after it set out for hours? I would hope no one would.
It is amazing how you could even think about my Grandfather being a "bad Curd nerd" you all could learn somthing from him. He has been in the cheese making industry since before most of us were born.
My Grandfather Wesley Lindquist, has made his chesse curds a staple at all of our family get together. Anybody in his area know that his cheese curds are the best and he would never mean to hurt anyone.

Just letting everyone who bashed my grandpa Wesley R. Lindquist. On July 8, 2006 Wesley Lindquist passed away. He lived a great life always making his family laugh with his Ole and Lena jokes and feeding us his wonderful cheese curds that will never be eaten by any of us ever again.
