gruyère and comte when i want a good melter, but ricotta and marscapone definitely tie for versatility.

and the mars cheese castle more than makes up for their limited cheese selection with their bizarre midwestern kitch.

I have to concur on Gruyère, at least as far as quiches go, and that's pretty far.

I'm also prone to a good cheddar for a quesadilla, gauche though that may be.

It depends on my mood.
I also have been known to put fontiago on a plate of decent potato chips and melting it in the microwave.
Fortunatly I am within driving distance of a woodman's market where you can get a great selection of cheeses for very little money. The running joke is that you send the tourists to Mars Cheese Castle so that can spend literally 4X the price and have a lesser selection. (http://en.wikipedia.org/wiki/Woodman's_Food_Market)
